Organic Potato Starch is a larger-grained starch that binds at low temperatures when compared to wheat or corn starches. Sauces thickened with root starches like potato, arrowroot or tapioca are silkier and softer. Root starches don’t perform as well as grain starches if your recipe calls for a long cook, and so they’re best used to thicken sauces toward the very end of cooking. Potato starch can be dissolved in water and added as a thickener, or sieved over food before frying, it also tolerates higher temperatures than cornstarch when used as a thickener. its perfect for wheat-free cooking! It will produce a superior sponge for cakes over other gluten free flours as it absorbs and retains moisture to a greater degree than wheat flour and produces cakes with a lighter fluffier texture (which always goes down well in my books).
